Who knew getting your vegetables could be this yummy? This strawberry carrot almond smoothie is a meal in a glass and is perfect pre-workout, post-workout, or a meal replacement any time of day.
I have to admit, the first time I blended carrots I was nervous because they seem so hard. I wondered what they would do to the blender blades and what the smoothie texture would be like. I use a high power blender but I was still nervous. There was no issue at all with blending the carrots and they blend so creamy. It’s really a wonderful smoothie texture when carrots are added.
In this smoothie the strawberries and almonds balance nicely with carrots, and ginger adds a little kick. There are loads of antioxidants, cardiovascular benefits and anti-inflammatory nutrients thanks to the carrots and strawberries. The added good fat from almonds help prevent blood sugar spikes and provide heart health benefits.
Despite being higher in calories, eating nuts lowers your risk of weight gain. Not all calories are equal in the way your body uses them and nuts are a perfect example.

Strawberry Carrot Almond Smoothie
For extra fiber add 1 tbsp chia seeds
Put all ingredients into a blender and blend until smooth.
Pour into your favorite glass and enjoy!
