This carrot spice smoothie is rich and creamy, and the spices complement it so nicely. The flavors will remind you of carrot cake.
I cannot get enough of this smoothie. I just want to eat it, like I want to eat carrot cake. This is the first time I’ve used coconut in a drink/food and loved it!
I use whole, unpeeled carrots instead of the baby cut carrots. Baby cut carrots are processed, and the less processing the better because the whole carrots will have more flavor and nutrients. Chopping them will help to blend them smooth, especially if you do not have a high-power blender.
Soaking the walnuts in water overnight will help them to blend easier but is not required for this recipe.
Carrots are well known for being rich in the antioxidant nutrient beta-carotene. Did you know that they are also a great source of a variety of antioxidants and other health-supporting nutrients? They are also loaded with vitamin C, potassium, vitamin K, biotin and fiber.
Walnuts are packed with omega-3 fatty acids – the beneficial kind of fat that you should include in your diet. One ounce of walnuts has 4 grams of protein and 2 grams of fiber. Protein and fiber are both important nutrients for your body – they are the fuel your body burns for energy. They also fill you up faster and help you feel fuller longer, helping you with weight management.

Carrot Spice Smoothie
- 1/2 cup carrots, chopped
- 1/4 cup walnuts
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 2 tsp coconut oil
- 1/4 tsp vanilla powder or extract (optional, skip this if you are using vanilla protein powder)
- 1 serving vanilla protein powder (optional, the one I use can be found here)
- 1 cup water
- 2 or 3 ice cubes (If you are using frozen carrots you can skip adding in the ice.)
For extra fiber add 1 tbsp chia seeds
Put all ingredients into a blender and blend until smooth.
Pour into your favorite glass and enjoy!
